Tonight our hospital Covid-19 caregivers will relish dishes inspired by The Herbfarm’s long-time prep-cook & dishwasher, Candido Hernandez-Reyes.
Each Friday, Candido makes “Family Meal” for our staff before dinner service. “Tinga”--a regional dish from his home state of Morelos, Mexico -- was the first Family Meal he ever made. Seemingly simple, the best tingas need balance, a sense of exactly the right amount of just a few ingredients. Several of us have tried. But everyone has failed to make Tinga quite like Candido’s.
Candido has been our colleague at The Herbfarm for 19 years. I have never met anyone as dedicated, genuinely happy to see you, eager to smile, and ready to work. He is a man who keeps us fueled on more than food. We know that sharing his energy tonight with Evergreen Hospital, Swedish First Hill and Swedish Cherry Hill Medical Centers, means sharing more than a meal. - Chef Chris
